The true definition of Mother’s Day

Mother’s Day is a very special day for a lot of  people and for others it’s just another day to show love and appreciation to our mothers. As we know that not all of you are able to celebrate this day with your mothers although there’s always that one person in your life who is a great mother figure to you and you shouldn’t feel like you don’t need to celebrate her!

Sister, Aunt, Friend, Grandmother, Neighbour, and your helper who always makes sure that everything you need is done and you are well taken care of!

We asked around to see what Mother’s Day means to them as children to their mother’s and mothers to their children, and here’s what they had to say:

” Mother’s Day to me means hand written/ drawn cards, breakfast in bed, and a chance to appreciate the love shown by my children”
“Mother’s Day to me as a child to my mother means a phone call just to make a day”

“Mother’s Day means church with all of my mothers “
“It means a chance to get the endless cooking tips and family recipes passed down to me”

Well to me, it means having the fresh smell of baked goods creeping into your room before I wake up; it means having an extra reason to do something special…extra special just because I love her!

Here’s something you can do for you and your mother, it’s not a spa date, nor is it an adventurous trip to the game reserve…. it’s a simple meal for two enjoy!

 

Butter Chicken Curry Soup served with Garlic & Herb Bread/Croutons

 

INGREDIENTS

Soup

2 tbsp canola/ olive oil
1 medium-large onion, sliced
1 carrot, grated
1 garlic clove, finely chopped
2 tsp mild curry spice mix
2 tsp paprika
½ tsp cinnamon
½ tsp ginger
½ tsp dried mixed herbs
1 tsp salt
1 tsp black pepper
1 tsp tomato paste
1 tsp red curry paste
2 cans diced tomatoes
2cups chicken stock
1(340 ml) cans evaporated milk/ cream
1cups cooked chicken (finely chopped/ shredded)
1 tsp lemon juice
Fresh herbs, to garnish (optional)

INSTRUCTIONS

In a large soup pot, heat the oil over low.
Add the onions and cook, stirring occasionally, until golden brown.

Add in the carrot, garlic, curry spice, paprika, cinnamon, ginger, herbs, salt and black pepper. Cook for 2 minutes.

Add the diced tomatoes, tomato paste, curry paste, and chicken stock. Turn heat up to medium.
Once soup is simmering, add the evaporated milk and blend until smooth (using either an immersion blender or by transferring to a stand blender).
Stir in the cooked chicken, and lemon juice.
Leave to simmer for 2 minutes
Serve while hot with the Croutons/Bread. (this can be store bought, save time)

 

Grilled Hake Fillet served with Creamed Mash Potato, glazed Rainbow Carrots and Roasted Baby Marrow

INGREDIENTS

2 hake fillets
2 tsp fish spice
2 tsp salt
2 tsp black pepper
10 g butter/ margarine
1 basil leaf
1 garlic clove (crushed)
1 lemon
6 rainbow carrots (halved)
4 baby marrows (sliced)
5g butter/margarine
2 Potatoes (cut into small cubes)
1 /4 cup milk
5g butter/margarine
1 tsp salt
1 tsp black pepper

INSTRUCTIONS

Pre heat the oven at 180 degrees.
Season the fish with salt, pepper, fish spice
In a frying pan heat the butter over low heat.
Add the basil leaf and garlic clove to the pan so the butter can infuse
Fry the fish for 2 minutes first, skin side down.
Flip the fish and cook on the other side for 2 minutes, then add juice of half a lemon and place in a foil packet and place in the oven to finish off.
In a pot place the diced potatoes in salt water and cook on medium heat until soft.
Drain the remaining water and add the butter, salt and pepper.
Mash until smooth and then add the milk
In a frying pan, heat the butter
Toss the carrots with the salt, sugar until tender and crisp
Drizzle the baby marrow with oil and season
Roast until cooked and place aside.
Plate as creative as you can and enjoy!
